Soups in the Crockpot


Good food, easy cooking and oh so simple. This labor saving method of cooking is one way for a busy household to have a balanced meal without the rush of preparation.
Most recipes are basic and can be altered to suit your tastes.


Crock Pot Fowl...BBQ


Take skinless, boneless chicken breast,
(1/2 breast per serving) place chicken into
crock pot and cover with your favorite BBQ
sauce.  I have also cooked wild duck in the
same manner. It is wonderful with wild rice
at the side.

Cooking time is 6-8 hours.

Any left over chicken may be shredded and used as a nice addition to a salad or used in a wrap with lettuce, shredded cheese, and thinly sliced apples. This can be eaten plain or with a dollop of ranch dressing.


Mexican Crock Pot Chicken

Another recipe that you use skinless, boneless chicken, place in the crock pot. Add a cup or so of water and a package of taco mix (your choice of brands). Stir it around and cook for 6-8 hours. Shred the meat before eating as tacos or can be stuffed into peta bread with your choice of veggies, any excess can easily be frozen for later use.


Pork and Vegetables

1 small pork loin roast
small red potatoes           (quantity depends on servings desired)
fresh carrots cut in 2 inch pieces
fresh sliced mushrooms (optional)
1/2 tsp parsley
pepper
1 can cream of mushroom soup
1 can chicken stock (may substitute water)

Place roast in bottom of crock pot add soup and broth.
Cover meat with liquid using extra water if needed.
Layer potatoes, carrots and sliced mushrooms.
Cover and set pot on low, cook 8-10 hours.
Serve with fresh fruit and a salad ......


BBQ PORK

Have you ever bought shredded BBQ pork? If you have, you know it is a
tasty meat for hot sandwiches. You can have the same thing at a very reasonable price and a minimum of work. The old trusty crock pot trick strikes again.

Use lean pork, I like loin because of it's very lean character.
Cut one roast into approximately 1 inch slices and place it in the pot.
Use your favorite commercial BBQ Sauce. One cup sauce and 1 cup water.
pour over meat stir around so meat is covered.
Cover and set on low.

6-8 hours of cooking should make the meat tender enough to shred. Serve on buns for a great hot BBQ sandwich. The excess can be frozen for a later meal.


Pot Roast and vegetables

Chuck roast (small to medium)
Season with salt and pepper.
Add a sprinkling of Mrs Dash. This is optional, but these prepared herbs and spices are a good addition to almost any dish. This is also a way to reduce the need for salt in most dishes.

Place the roast into the bottom of the crock pot.
Add 1/4 cup water.
Layer prepared vegetables
quartered potatoes (approx. 2-3 quarters per person depending on potatoes size)
1 small quartered onion
3 carrots cut into 2-3 inch lengths
You may add 1 cup of thawed frozen peas about 1/2 hour before serving.

Wild duck in the crock pot.

Duck may be cooked in the crockpot but it is one meat that needs to be watched.very carefully as not to overcook.
Bed several skinned duck breast on cooked wild rice/brown rice.
Rice mixture should be seasoned with salt, and pepper to taste.

slow cooker should be on high setting and after about 1  to 1 1/2 hours check the duck for doneness. You are looking for temps around 140 degrees   When duck reaches proper temperatures remove breasts and allow to rest covered for about 5 minutes before slicing. The meat should be medium to medium rare.

Serve with rice, green salad and fresh fruit.

If you overcook wild duck you will find it very dry, tough and not particularly flavorful. 

You can turn it into fairly good shredded meat when done in BBQ sauce and cooked a long time..
