Pan grilled Salmon
Take serving sized portion of a salmon fillet. Rub a small amount of Worcestershire sauce on one side of the fillet. Add a small amount of fresh ground pepper. Place the fish into a pan that has had a small amount of oil seasoned with fresh garlic. Grill fish till it is about half cooked. Turn gently, squeeze the juice from a lemon slice over the fish (orange works too!). Cook till done. Time of cooking depends on thickness of the fish.
(cooking temp. for this is medium to medium high heat.)
Baked Salmon/Steelhead
Place fillets in a foil lined baking dish. Over the top of each piece place several orange slices along the length of the fish, then layer several thinly sliced onion over the top of everything. Add fresh ground pepper to taste, and a light sprinkling dill weed. Cover dish with foil and bake 35-45 minutes depending on the size of the fillets.
This is a basic starter recipe, any herb or additional flavoring can be added to give the fish additional flavor. Personalize it to suit your own taste!!!!
I prefer to remove the skin and any noticeable fat along the back of the fillet. This will end up with fish that is milder in flavor.
I tend to like the flavor of the fish by itself but I know of several people that enjoy adding teriyaki or a sweet, smoky, BBQ sauce over the fish.
