Salads are something we all take for granted. Here are a few salads that are a bit different from the simple lettuce we so often settle for. Peas, apples and crunch add to the color and texture. Try something new soon.
There are a number of salad ingredients can be made ahead then used later. These include hard boiled eggs, various pastas, and any meats leftover from other meals.
Pastas and chunked meats may be frozen if you don't plan on using them within a few days.
Pasta and Pea salad.
2 cups cooked bow tie pasta (or your choice)
I cup thawed and drained sweet petit peas.
1/2 cup thinly sliced carrots
1/2 cup diced cucumber
1 small red apple cored and coarsely chopped (skin on)
Dressing: 3/4 cup Mayonnaise
1/4 cup wine vinegar
4 table spoons sugar or sugar substitute
1/2 tsp coarse ground pepper.
1/2 tsp dried dill weed
Dash of salt
Brown and Wild Rice salad - A nice change from the traditional potato salad.
1 1/2 cups long grain brown rice
1/2 cup wild rice
1/2 tsp salt
Steam in 5 cups water until done.
Cool cooked rice before adding
4 chopped hard boiled eggs
1/2 cup chopped celery
1 or 2 dill pickles chopped
1/2 cup chopped green onions
(sweet onion may be substituted)
Salt to taste
Dress salad with Mayonnaise or salad dressing
Amounts may vary depending on personal tastes.
Apple - Pea Crunch salad
2 cups cored chopped Red Delicious apples, skin left on.
Juice from one orange pored over apples chunks, stir well to prevent browning.
add
1 1/2 cups chopped celery
1 1/2 cups thawed frozen petite peas
1/2 chopped walnuts
1/2 cup raisins (optional)
add
1 cup Miracle Whip salad dressing or Mayo ( dressing amounts may be modified dependent on personal tastes
Bottled coleslaw dressing also works well in this recipe.)
Stir well and refrigerate until served
Vinegar onions and cucumbers
2 medium to large cucumbers...remove skin and seeds, slice thinly
( if you have access to fresh home grown, young cucumbers, you do not need to remove either the skin or seeds.)
1 large sweet onion sliced thinly,
1/2 tsp dill weed
Cover onions and cucumbers with a mixture of 3 parts cider vinegar and 1 part water.
Allow to set at least an hour before serving
Black-Eye Peas and Tomatoes
1 16 oz can Black-Eye Peas, Drain
1 cup diced celery
1 cup dice tomatoes
French dressing, your choice of brands
Add dressing to Peas, celery and tomatoes cover nicely
Serve on a bed of leaf lettuce.
